Note from the wine maker: “This cuvée, from the renowned terroir « Les Belles Voyes » comes from our oldest plot in Oger. It is vinified in small oak barrels. By using the oak barrels, we seek a slight oxygenation that will bring about distinctive aromatic characters unique to this wine.”
Blend: 100% chardonnay growing on the plot “Les Belles Voyes”.
Total acidity: 6.2 g/l
Ageing: 12 months in oak barrels.
Note from Stanislas Buffet: “Les Belles Voyes» is a unique plot of about one hectare. The harvest, as any where else in Champagne, is exclusively handmade with several selective sorting in order to pick the best of the grapes. Only a very small part of the must will be used for the final blending. Several years of ageing on lees conclude the vinification process.”
Note from the wine maker: “Aged in oak barrels, this cuvée displays a huge aromatic complexity : Hazelnut or vanilla with flexible and round tannins. Ageing in oak barrels provides delicate woody aromas and preserves the chardonnay finesse.”
Note from Stanislas Buffet: “The robe: Limpid and bright with golden reflexions. Moderate effervescence with thin bubbles.
The nose: Aromatic range with remarkable wealth and amazing complexity. Empyreumatic notes related to the barrel ageing (toasted, bun, caramel taste, nuts). Stewed fruits notes (peach, apricot). Herbal teas aromas (verbena tea), gingerbread and spices (nutmeg).
The mouth : Nice foam consistency, intense and delicate with medium bubbles finesse. The first taste is fresh and straightforward. The palate is tight and so complex with floral notes (honey), gingerbread, bun notes and buttery. The finish is very long (8 to 9 sec), fresh and clean with honey notes and slightly woody. A remarkable champagne. A great moment of pure pleasure.”

With its amazing aromatic range, this cuvée would have its place at the appetizer but would have also its place during a delicious meal with smoked fish, a seafood platter or poultry in a sauce.
