Note from the wine maker: “Champagne with pale golden colour. Aromas remain surpisingly fresh despite the age of this blend (1997) with slight notes of candied fruits and flowers (honey). In mouth, HBH 1997 reveals a huge finesse and a rare lightness, as usual for any HBH cuvée.”
Note from Stanislas Buffet: “The robe : Limpid and bright champagne. Intense straw-coloured with discreet golden highlights. Moderate effervescence with thin bubbles.
The nose : Intense, sustained with amazing wealth. Aromatic range with signs of development due to ten years in cellar. Stewed fruits notes (quince, fig) or candied fruits (apricot). Intense floral notes (honey), vegetal notes (verbena tea) and empyreumatic flavours (caramel, bun).
The mouth : Concentrated and slightly heady. Effervescence surpisingly present for the age of this vintage. First taste is fresh and strong. Aromas range equivalent to the nose with addition of citrus notes (tangerine, bitter orange). Intense finish with remarkable length of flavours (8-9 sec). Freshness sustained by intensity and wealth of flavours. A great moment of pleasure. For old vintage lovers.”
